Thank goodness for Lunds! No more yellow, rubbery, smelly crepes!!
Easy and delicious. I prefer this over other mixes /recipes because the pancakes come out ever so slightly denser (yet light and spongey). I noticed this mix has baking powder so maybe that's the "secret" ingredient to the texture? Also, this mix calls for only 1 egg so one doesn't get the overwhelming flavor and smell of eggs, or undercooked flour tortilla (GAG!!). The only deviation was addition 1 tsp of vanilla to batter. Mixed wet ingredients on high setting for approx 30 secs until frothy, then mix in dry mix until incorporated (20 more secs or so). LET BATTER REST at least 15 minutes while you chop fresh fruit, cook bacon etc. I used a preheated 10 inch non-stick skillet with about 1/4 cup batter. This may not be "authentic" but I it's how I like them. My only criticism would be the price point. At $8 box plus cost of ingredients, it's not better value than going to restaurant. Still a 5 star product though IMO.

Delicious and Easy Mix for Swedish Pancakes
We love Swedish pancakes. When we visit our son in Austin, we always go to the Original Pancake House. Our favorite items are Crepes and Swedish Pancakes. I have a great recipe for Crepes, but for some reason, my Swedish Pancakes from scratch never really turn out great. I have ordered this brand of Swedish pancake mix many times. It is easy to mix, and it never sticks.The batter will look watery, but these are very thin. I make them small, about 5 inches in diameter. We enjoy them with Lingonberry jam.
