Would this be good for storing distilled water long-term?

you may be able to store distilled water long term, but I am using these carboys for distilling apple wine. The work great for that purpose.

Has anyone noticed the sides becoming hazy? Did my first batch of wine and after cleaning the top wall and bottom are a little cloudy now.

I've not had that experience. Is it from the stabilizing & clearing process you are using? We use a drill w/the attachment so it gets a little scratched up on the sides but not hazy. Also, make sure you are using water & sodium/potassium metabisulphate. Don't use soap
