Q: is the boning knife stiff or flexible?

Stiff. Great knives. We bought them for our motorhome as they are a compact set. I would buy them again.

Q: is the edge tapered on both sides? im left handed.

Knife set is beveled on both sides... excluding the serrated bread knife. Set is professional grade, very sharp, quality steel and comes with attractive see through knife block. I recommend the product.

Q: Is the bottom of the wood glass block open, or is there a glass bottom?

The bottom is open as to not trap moisture in the block
