So if I just take a picture with the back ground would be white?

It depends on where you place proper exposure. It you expose for an object in front of the backdrop then the backdrop will receive less light and will be underexposed. Depending on how great the distance and exposure difference is, the backdrop can be from white to just about black. If you want it to be white you must use the same lighting for both.
