What's the difference between the two heads? They look exactly the same to me.

The default head has classic shaped wings and sculpted seams to look like a soft goods hood. The second head has modern, angular looking wings and no seams to simulate a helmeted style hood.

How to change hands? I'm afraid I'll break it if i pull the hands it comes with straight out. Is that the way or is there a trick?

There’s no trick. They just pull straight out. All of the Marvel Legends have the same joint attached to the wrists. Obviously with excessive changing of the hands the joint will wear down and become looser.
