Tasty and Convenient
I used it to season my rice with lunch (please ignore the sad tamagoyaki in the other side, I was in a hurry). It was very good tasting, nice strong flavor. I also used it in dressings for vegetables and cold soba noodles. My dressing recipe using this is: 2 parts rice vinegar, 2 parts sesame oil, 1 part koikuchi shoyu (Japan Brewed Kikoman is good enough for this, American brewed is honestly not, they taste very different.) and 1 part of ume paste. Just whisk it together. I put it on a cold soba salad with sliced daikon, carrot, cabbage, cucumber, kale, and green onion or chives. It's also good with moyashi/ beansprouts.

OHMYGOSHHHHHHH
This stuff is amazing. How have I never seen this before in the Asian markets- I'm not sure, but this is truly a game changer. I love umeboshi and the kick of flavor for nigiri or bbq, and now I can just add a little ume paste rather than the seeded plums- which have caused an "oops" dental problem with friends who didn't know about the seed. Now I can add the flavor and no worries. I will be using this on the regular! Oishiikata!

Convenient, not quite as good as whole umeboshi
This is definitely a good alternative to whole umeboshi if they are unavailable or just not convenient. It's very convenient to use and lasts a long time because the flavor is very strong so only a little needs to be used at a time (unless you're like me who will down a tablespoon at a time lol). However, I do find that the paste one does not have the same delicious texture as umeboshi, and two does not have the same fruity fragrance or taste. It seems to trade a bit of that for a more salty taste, which is fine but when I'm eating umeboshi rice balls I find using the paste a little underwhelming. All in all, a fine alternative and definitely a more convenient option to get the pickled plum flavor, but it can't beat using real, whole umeboshi.

A little dab will do ya!
Delicious with rice or rice ball / musubi. Just a tiny bit for a burst of flavor, somewhat like wasabi, in that it has a kick. My grandmother always made me rice ball with a plum seed in the center. This paste is like condensed version of the plum seed.

Great flavor and convenience. Ume deliciousness without the seed! Great for musubi, chazuke, or just over rice. This will be a staple for me!

Very Interesting
I didn't know how salty this product was before my first taste. Upon my realization it didn't take too long to adapt and figure out how to incorporate it into my cooking. The Japanese would probably be horrified but I'm having fun.

Terrible Taste! Like Salt Paste!
This "paste" has a very strong salt flavor with NO fruity or tangy plum flavor. No hint of fruit at all. Not even a whisper. If you love salt paste, you'll love this product. If like me you were expecting a modicum at least of plum/fruit flavor you will be very disappointed! Again, it's like brown, salt paste. No Fruit Flavor At All. Where's the plum? It's not in this salt paste. This salt paste also has no notes of vinegar or any tang. Just Salt with brown coloring. If you dumped a cup of salt into brown goo, then you would have the equivalent of this salt paste. Would I put it on meats? No because I could sprinkle salt instead.

its not pure ume paste... lots of other ingredients (and plum isnt even listed on the ingredients on the bottle- it says japanese apricot but im going to assume thats the plum?!) but it is pretty delicious! the squeezy bottle is handy. will buy again.

Product has additives including sugar. Seems waterey compared to other umeboshi paste I've used.
