


Acacia honey is produced in May in Northeastern Italy. This delicate and much sought-after honey is runny, and very pale straw-yellow in color; it is almost crystal-clear. Acacia honey has delicate flavors of sugared almond and vanilla. Due to its high concentration of fructose, it does not crystallize easily.
