Is the trigonal planar arrangement able to be made?

Yes, some of the metallic (silver) beads have a trigonal planar configuration. I believe this set only includes 2 such beads though.

How does this help with Organic Chemistry?

It's very helpful when it comes to visualizing the molecules that your talking about. Especially for stereochemistry section of organic, this can be a lifesaver because now you can actually hold the molecules you are talking about.

My professor wants us to have a model kit that works for VSEPR. Is this kit going to fulfill this requirement?

Yes, this kit has atoms with a certain number of holes and the holes are spaced apart at certain angles so you can understand the geometry of the bonds and how many bonds each atom can make.
