Can you take calls on it?

If you mean via an LTE/4G cellular connection then according the written specs on the webpage here unfortunately not (unless you happen to have a Vodafone account set up on it). All other networks are NOT currently supported. By all means this may one day change but to date (17/1/21) no promise (or even hint of such a freedom has been offered by the maker)

Do you need an eSim or to have your phone with you for this to track your route when outside doing exercise?

This watch doesn't support eSIM so you can't use them, but it does have built in GPS for location tracking.

Can you store your own mp3s on the watch?

I would think so..try NavExplorer on the Play Store. One component installs on your phone and one on your watch, you can then download MP3 music files from the phone to the watch Music directory and once on the watch use the watch NavPlayer to play them. Works on other Wear OS products I have so I imagine it would work on this model

Can you answer WhatsApp messages from this watch

Yes, you can respond to WhatsApp messages by typing on the watch or using your voice, and you can also send emojis in the quick reply part of the notification.
