I don' see a NON-GMO label anywhere... Very disappointing...

1. You made a statement, not a question. 2. USDA Organic products are prohibited from containing GMOs 3. As far as I'm aware, no one has made a GMO coconut yet. 4. The USA requires GMOs and GMO-derived products to display a "Bioengineered" logo now. Try doing some actual research instead of just blindly shopping based on buzzwords and logos. A lot of those logos require insane licensing fees and/or have onerous application processes.

Can you make coconut milk from this? How? We love coconut milk, but cannot find any at the store that does't have carageenan and guar gum in it.

Absolutely. That's what I use it for. I make it 2 parts water to 1 part coconut. It will last in the refrigerator about 5-6 days, so I don't make a lot at a time. I use a Vitamix. Blend the coconut and water for about 2 minutes. Pour the mix into a nut meat bag to strain it. You have to squeeze the bag to get the most milk. (Any fine meshed bag will do but I like the nut meat bag which I ordered online.) I guess you could use several layers of cheesecloth.

how does this taste by itself? is it sweet to the taste?

It just tastes like coconut, very slightly sweet like coconut flesh. If you have a recipe that calls for sweetened coconut, this won't work. I usually use this to "bread" chicken for a fried chicken feel or I use it in macaroons, which I sweeten myself. I prefer that BC I know what type of sugar is being used. I also make coconut milk with these that tastes delicious in my smoothies bc it just imparts a coconut flavor. I hope this helps!

can it be grind to make a flour ?

Actually, coconut flour has the oil pressed out first, before grinding, so grinding this will NOT make coconut flour. However, if you toss a bag of this into a Vitamix, in less than two minutes you will have coconut butter, or coconut manna, at a fraction of the cost of buying those products. I just made a batch.
