Any idea if these are waterproof at all?

Not waterproof; it's just regular printer paper glued to a very thin magnet sheet. You can spray or paint over the printing (after the ink has dried) with an acrylic sealer or a waterproof Mod Podge to protect your project.

I want to turn paper dolls & their clothes into magnets for my daughter. Could I do that with this paper? Will the clothes stick & stay on the dolls?

I am thinking you can do that. The magnets are NOT super strong and thus will not frustrate a child wanting to dress her paper doll. However, if the child wants the paper dolls to do calisthenics, then the magnetic clothes might not hold quite as well - lol. I do believe it will work fine for your purposes. Have fun!

I want to glue these on the inside of my kitchen cabinets with the magnetic side out to post recipes, etc, to...will this work with other magnets?

Yes, I believe it would work but take in to account that these are not very strong magnets. These are made to print pictures, designs etc on and then put on a locker, filing cabinet, car door or some other surface. I would suggest just buying a heavier/stronger magnet that are self adhesive from a store that carries craft supplies such as Wal-Mart, Hobby Lobby etc. I have bought some and used them in Sunday School and VBS to attach to the back of photo frames and such to attach to the fridge. However, these are wonderful magnetic sheets to print things on using your home computer, hope this helps!!
