Boîte luxueuse. Couteau au tranchant d'origine capable de tailler dans une feuille de papier extra fine un rond de la taille d'une pièce de 2 euros. Full tang, manche g10 inusable, lame haute, donc un peu plus lourd que d'autre couteau chef de même longueur (de toute façon pour un professionnel je conseille un couteau qu'on aura pas peur d'abimer, moi je suis juste un amateur exigeant) Le tranchant plusieurs fois + longtemps qu'un couteau moyen de gamme à 55 hrc par exemple, et pour un particulier (je donne un ordre d'idée) il suffira de le passer au fusil ou cuir+pâte à polir entre 1 fois par semaine ou 1 par mois (selon l'intensité de votre utilisation) et une fois 6 mois ou 1 ans sur une pierre a aiguiser.

Ich habe das Messer jetzt ca. ein halbes Jahr im Einsatz. Ein sehr schönes großes Küchenmesser, dass auf Grund des gleichförmigen Klingenradius perfekt und ich meine wirklich perfekt für den Wiegeschnitt geeignet ist. Auch der abgerundete Klingenrücken macht das Handling dabei sehr bequem. Es liegt sehr angenehm in der Hand und ist auf grund eines guten Gewichts (nicht zu schwer oder leicht) auch super zum klein hacken geeignet. Allerdings bitte auf nichts Hartem rumhacken, sowas vertragen so harte Schnitthaltige Klingen im Allgemeinen nicht. Die Klinge ist wirklich abartig rasiermesserscharf und geht durch nahezu alle Materialien, wie durch Butter. Also geschmolzene Butter. ;D Auch den Tomatentest hat es hervorragend bestanden. Die Schnitthaltigkeit ist, wie zu erwarten bei ~62HRC, bis dato absolut einwandfrei. Bei dem Hammerschlagdesign würde ich behaupten, dass es eher von optischer Natur ist, also es passiert schon, dass zum Beispiel Gurke beim Schneiden am Messer kleben bleibt. Und der Rücken ist für meinen Geschmack etwas dick, aber das ist denke ich Ansichtssache. Alles in Allem kann man sagen, dass das Messer sehr schön aussieht und auch hervorragend funktioniert. Ich glaube in dem Preissegment wird man kaum etwas besseres finden. Auf jeden Fall macht Kochen seit ich das Messer habe mehr Spaß und damit hat sich dieses zu meinem absoluten Lieblingsmesser entwickelt.

This chef knife is solid! Super sharp out the box! Has a nice weight to it, I was skeptical about the handle but it feels good in my hand. And is extremely sharp. Expensive, yes, but worth it. It’s my first Dalstrong knife. It has an elegance about it. Even with the hammered Damascus which isn’t laser etched so each knife in this series is different. It cuts and slices like a dream. This isn’t for cutting bone, even tho I’m sure it can, a cleaver would be better suited for that. Plus I like it has a full tang. Unlike some of their other knives that have a partial tang. If you are going to pay a decent amount of money for a knife it should have a full tang. IMO. And be sharp out the box. Honestly it needs to be seen in person to appreciate the craftsmanship.

1 year edit!: I have had the knife for a little over a year now and I must say that it has exceeded all expectations. The knife is used on a daily basis on a plastic(like) cutting board and it retains an edge beautifully well. I have gotten the knife professionally sharpened a couple of times over the course of the year and it makes a huge difference! The knife was sharp before sharpening, then after sharpening there are no words to describe it. A couple of things of note for those looking into buying one: This knife is heavy, it is significantly heavier than many other Japanese style knives. I have had the opportunity to use some Shun knives and while they feel nimble and are very light they aren't meant for everyone (this is not a bad thing). I have larger hands and as a result is was hard for me to find a comfortable holding position with the Shun knife. I am also a big fan of a knife with some weight to it, which the Shun doesn't have. I like letting the weight of the knife do the work rather than me having to use a little extra force. Even after a year, I still stop and admire the craftsmanship of the Dalstrong knife and still get a smile on my face every time I use it. Since the time of purchase of thise blade, my Dalstrong set has grown to include a couple more knives: The Shogun Cleaver, and the Phantom Bread Knife. Reviews to come soon. Happy Cutting! *Original Review* So, to begin - I had a cheap Walmart set of Farberware knives. They were not the best by any set of the imagination but I did learn how to use them efficiently and the test beds for learning how to sharpen with a Whetstone. When I was finished with them, they were brutally sharp and could hold their own. One evening, after cleaning the kitchen, the Chef’s Knife broke… snapped in half. I was sad, I had grown attached to the blade as I had it for several years and learned a lot with it. After considerable research and looking at multiple blades that were within my price range, and possessed the aesthetics that I decided. I chose the Dalstrong. How I came to this decision was based on the stories of the customer service. This decision was made BEFORE I knew anything about the knife itself, I always find myself favouring companies that are passionate about what they do. If I know they enjoy what they do I know I will enjoy the product of that passion. So, I knew I was going to go with Dalstrong, now I needed to chose the blade. The Shogun Series was what caught my eye first and I settled on it right away. I was a no brainer. The blade is gorgeous in photos, and that doesn’t even hold a candle to what it looks like in person. I place the order, paid for 1 day shipping as I needed it the next day and it showed up on time. Packaged as expected. The unboxing experience is something else, you need to get one to know what I mean. It comes in a beautiful box that you would expect from a high end smart phone or other kind of technology, not a knife. But it is in there, nestled in some soft foam with documentation and a fancy key chain (which is now on my daily key set). The blade came in an amazing plastic sheath to protect it from everything. I took that off to reveal the blade itself… My goodness. The blade. I was floored, it was beautiful. The hammered finish and the look of it was nothing short of incredible. I could talk about how the blade looks, but I will move on. I found the information booklet very useful, showed me how to care for such a beautiful blade especially since this is an upgrade from cheap stainless steel blades as well as options and recommendation for sharpening tools (I will be putting my whetstone to work). The comment card was a fantastic touch as well as the microfiber cloth. I appreciated the invitation to the VIP club so that I can keep track of products. The first cuts with this new knife. It had exceeded all expectations. I thought my old knife was sharp. Compared to this one, I might as well have been cutting with a spoon. I took out a carrot and it cut through it like it wasn’t even there. I could make slices just millimetres thick with no problems. Dice it like I was cutting through butter. Just a joy to use. This review is getting too long, and I have probably lost a lot of reader’s interest. So, I will digress. Will I buy another Dalstrong Knife? Yes. Without a measure of hesitation. The experience of getting it and being excited for it was great! Using it was an absolute joy. I will for sure buy another blade (probably the paring knife or utility knife) when I have the money for it, which will not be for a while. But, I will look forward to it nonetheless.

Este es mi primer cuchillo de alta gama, por lo que mi opinión no es la de un experto, simplemente la de un usuario promedio. El Dalstrong Shogun X cuchillo de chef de 8 pulgadas es una obra de arte!!! Desde el punto de vista estético, me parece que es una belleza!!! Los acabados amartillado y damasco le dan un toque exótico, y los logos con el león, tanto en la hoja del cuchillo, como en el fondo del mango le dan un aire de elegancia y fuerza. Aunado a ello el acabado de espejo hace que destaque en cualquier cocina!!! La caja en la que es enviado me parece de muy buen gusto y funciona magníficamente para transportarlo y lucirlo. El afilado con el que viene el cuchillo es buenísimo, sólo uno o dos centímetros de la parte baja de mi cuchillo no estaban perfectamente afilados, pero como me gusta el afilado con piedra a mano alzada no tuve problemas en igualarlo al resto de la hoja. El cuchillo es más pesado de lo que estoy acostumbrado, pero nada que después de los primeros minutos de cortar no te acostumbres. Además ese mismo peso resulta benéfico para trabajar, pues cortas más fácilmente lo que sea. El mango es muy cómodo y se siente de mucha calidad!!! Estrené el cuchillo picando un par de kilos de cebollas y bastante cilantro y fue una maravilla, se comportó increíble y ha sido una delicia usarlo!!! Llevo un mes usándolo en casa y no ha perdido su filo. Aunque hay que estar conscientes que como todo cuchillo va a requerir una afilada de vez en cuando, así es que recomiendo que usen piedras de afilado y que asienten el afilado con cuero o lo lleven con un profesional cuando sea necesario. Tal vez mi única queja es que la funda protectora del cuchillo es de plástico y no se siente de tan alta calidad como el cuchillo o la misma caja en la que es enviado. Estoy completamente enamorado de mi cuchillo y se lo voy a recomendar a mis amigos y familiares!!! Tal vez no conozco de cuchillos japoneses de alta gama, pero sin duda es un cuchillo de mucha calidad, que estoy seguro, está a la altura de los mejores!!!
