Para quien no conozca la dieta GAPS es un sistema para recuperar estados fuertes de debilidad y carencia de vitaminas y minerales. Sigue una pautas muy estrictas pero hay personas que gracias a ella han recuperado una vida normal tras ser diagnosticados de alguna enfermedad autoinmune. ESte libro contiene las instrucciones y recetas para ello, y ademas esta escrito de forma amena y con imagenes muy descriptivas que ayudan mucho, ya que esta dieta require mucho de DIY ( do it yourself o hazlo tú mismo).A mi me ha gustado mucho.

Finally--a cookbook with actual GAPS recipes
This cookbook is a collection of actual recipes that follow Dr. Natasha Campbell-McBride's GAPS (Gut and Psychology Syndrome) protocol. Hilary Boynton and Mary G. Brackett have healed themselves as well as their families using this diet protocol.The book explains the difference between meat stock and bone broth, gives guidelines as to how to stock the pantry and larder, and offers step-by-step instructions how to eat one's way back to health. The recipes are Hilary's and they are accompanied by Mary's beautiful photography work.Hilary has created recipes for the six stages of the GAPS Introduction Diet. She then follows with recipes for the Full GAPS Diet, with a chapter devoted to each of the following:• Condiments and Culinary Staples• Salads• Fish• Poultry• Meat• Organ Meats• Vegetables• Ferments• Snacks• DessertsAll of this is interspersed throughout the book with anecdotes of Hilary's and her family's GAPS diet journey.One early chapter in the book is entitled "Essential Ingredients and Techniques". Here is where the instructions are found for making meat stock and bone broth. This chapter also contains a section on nuts and seeds with instructions for making nut milks and flours, a section on everything that can be made with coconut, and a section on making homemade dairy products (yogurt, kefir, etc.) using raw milk. Needless to say, here in Canada raw milk is unavailable (illegal). That being the case, homemade yogurt, kefir, butter and ghee made with pasteurized milk should still be superior to any of the commercial products in the grocery store, especially if the milk is organic. I can't resist the temptation to say here that it's none of the government's business if I wish to consume raw milk. But if I want it, I suppose I'll have to move out to the countryside and buy my own cow, at least until the law gets changed.The book ends with a resource section and an index. Altogether, I think it's a welcome springboard to getting started on a GAPS diet, and it fills a "gap" of its own, namely the fact that up to now there really hasn't been much in the way of actual recipes to help people get started.
