At what point on the size scale does the 3-string (G) become a wound string? Individual string dimension should be stated in the specs.

Usually a wound 3rd is clearly stated on strings packaging, as that is a salient feature. You will find this often in electric sets 12-52, usually labelled "Heavy" or "Jazz." In most cases the wound G string starts at .021 or .022, but I've seen sets that wind the g at .018-.019. I know this is more general info and not related to Elixir, but I'm guessing it applies to their strings, too.

Are the unwound strings coated with the same material as the wound strings? Also, is the G string wrapped in 9-42 sets?

The plain strings are treated with an anti-rust coating thats different from the nanoweb wrap or the other strings. The 3rd is plain steel in the 9-42.

Would these be okay for a Harmony acoustic electric guitar and what gauge strings?

Typically for an acoustic guitar you want acoustic strings, commonly phosphor bronze. These are for an electric guitar and have an unwound fourth string. They can be used in any guitar if you choose. I would suggest 11's on the light and up to 13's. I typically use 12's in my acoustic guitars
