Folks have been mentioning that their umbrellas can be anchored in sand by these stakes. How?

We haven't tried an umbrella but used them to anchor a pop up awning and they worked great. They are long enough that they anchor deep into the sand. Insert the clear tube they come in into the round opening in the top and start twisting.

Would this hold on the beach with a 55 lbs dog attached? He's good off leash, but wanders while I'm fishing and not able to pay attention.

I would say it depends on the type of sand the Orange Screw is installed in (soft or wet/hard) and how much or often the dog pulls on the anchor. I've never had one pull out of the sand even on windy days at the beach and we use two of them to anchor our Sportbrella XL. These have a good length that allows for them to be installed pretty deep in the sand.
