Are the glass bottles dishwasher safe?

The bottles, yes, but the neck is narrow... not much cleaning will happen on the inside. The caps and inserts are not dishwasher safe.

Would this work for homemade flavored olive oils?

I would say yes. However, if you have herbs or fruit/veggie pieces in the oil, they could get stuck in the cap's shaker lid.

Can these be reused or is it just use once and discard?

Yes, glass bottles can be washed and reused... can even sterilize them if you wish. The bottle caps are plastic, but for sauces, etc., I'd wash them well and reuse them too.
