Solid boning knife. Im a meat cutter by trade and cut hundreds of bones out every day. The handle feels comfortable enough to hold it for 8-10 hours a day doing fast paced work and the blade holds an edge well with a skinny, slightly bendable shape for tricky bones like ham and shoulder cuts.

We had a big ol' chicken party and invited 60 cornish chicken to the freezer. These knives were great from cleaning to cutting up. Held their edges verywell. We used a sharpener a couple times but for the amount of work, that was better performance than others we've used. Plus great color choices to keep the knives separated.
