What is the maximum panel thickness for the socket?

I would it would be safe from 24 ga - 16 gauge. Measure the depth of the threads and go accordingly. You only need enough threads to secure the socket with the nut and lock washer provided with the socket.

Is 16mm the diameter of the plug or does it include the screw down collar?

the jack has a collar that fits flush up against the mount and the nut tightend from the inside of the mount. The plug is as you see it in the picture everything you see is what you get hope that helps

What is the current rating on this connector?

They do not spec it for this connector specifically but on other similar connectors they list ratings of 3-5 amps however that does not mean this connector can handle that much current/ I am using them for microphone connectors for radios and am using nowhere near that current for that application.

What gage wire do I use?

Solder cup AWG 22-26 should be ok
