HOw hot can food pans be when you place them in the camcarrier?

This is a warming unit to keep contents inside the Cambro carrier for longer periods of time, if your question is regarding the actual Cambro carrier, If using metal food pans, cool to 250°F before placing onto rails, otherwise if using Cambro High Heat pans it can be at any temperature.

If this item is a half size version is there a larger full size version?

As far as I know, this is the only size.

Is this listing for one warmer or two?

i received one. It works well but if you are keeping a full hot box of aps, you might need two. It does keep food warmer

Can you use these in an insulated bag carrier instead of a cambro cabinet? (I.e., I'm assuming the case that encloses the granite is heat proof?)

Yes, that is what we use our heat pellets (Cambro, 1210PW191) for. I put them in a 350 oven, about a half way into cooking the product. They work well.
