Does this device send the status of the manual switch inputs back to the z-wave controller? Alternatively does it send the status of the outputs?

The relay will send the status of the manual switch it is connected to (either on or off) to the app or hub.

Could I replace a switch with just this and no toggle switch?

The ZWN-RSM1 Switch Module is a component of lighting control system, it can not be used separately but should turn an existing switch into a Z-Wave switch.

Is it possible to open the case and connect to the com, no and nc contacts directly?

There are no Com, No, NC contacts on the ZWN-RSM1 Z-Wave module.

What type of mechanical switch do I pair this with? Toggle switches wouldn't be ideal, since they have up/down positions. Are there alternatives?

Any on/off type switch will work. The zwave relay will toggle when the manual switch is changed. A momentary switch will not work because it triggers the zwave switch when pressed and then again when depressed thus not changing from its original state.
