Can I use this to bake on a pan?

Yes, it can be used in the oven. The product page clearly says it can be used in the oven, suitable for all types of cooking and baking - biscuits, pastries, making sweets, roasting meat and vegetables, and baking fish. The max temperature of 230 C (450 F) is printed on the mat.

Just used mine today. Noticed there are loose threads on the end. Is this fiberglass and is it safe?

It is NOT fiberglass. It's silicone, and yes, I'd get rid of the loose threads so it doesn't end up in your food if you can...

Can this be used for rolling pizza dough and is there any gram measurements ?

I've never used it for pizza dough but have used it for cookies and pie crust and it works great. Not sure of the weight, but it's very light.
