Very Informative Book
I originally checked this book out from the library. There was so much information about the process of making nutritious, "Healthy Bread" that I knew I wanted my own copy. When I made some of the book's whole wheat bread, and my husband loved it, I knew I needed to buy a copy. This was much less expensive than buying it at a book store.

So easy & versatile!
Love this book!I got it from the library and tried some of the recipes before buying. I did end up buying one to add to my cookbook collection. We’ve fallen in love with the whole wheat brioche, chocolate brioche, and the spelt (olive, but I leave out the olives) breads in this book. What I most enjoy is how these recipes are so versatile. And given the massive quantity of dough you end up with, I feel good about experimenting with each bake. We’ve made plain loaves, filled loaves, rolls, donuts, tarts, soft pretzels, garlic knots, pitas, pizza crusts (and probably more things that I’m forgetting) using these doughs and recipes.I feel this book (and others in the series) have greatly increased my confidence in the kitchen.

Perfect for the health conscious and those who love wheat breads.
I gave it four stars even though I am sending it back. It isn't fair to rate it on it not being what I wanted; when it is a great book. Perfect for the person who is health conscious, wants to know all about making bread and using wheat and other type of grains bread and has no interest in white flour. There is a lot of information on type of grains, nutritional values, positive/negatives of each type, measurements I'm US, metric and weight, info on various brand names, equipment needed and how to use them. However, for those who prefer to use the unhealthy white bleached flour (impression I got from reading the info on grains) this is not the book for you. Hubby and I wouldn't mind a mix of some wheat and white flour, but our son would flat out refuse to eat it, he has made it clear he won't touch it and I promised I wouldn't add it and try to trick him. So, since all the recipes call for wheat, rye and other types of flour this book is not for me. The recipes look great, there is a wide variety of them from breads to pastries, pizza and much more and info is given of how many are almost the same; just a slight variation in shape and a couple of other ingredients that I found interesting. As a novice to bread making I wasn't sure on how to change the recipes to use white flour and to be honest, I am too old to learn all the info needed, that would be for someone like my daughter, or even granddaughter who is 14 and likes to cook.On our limited income, however, I can't afford to keep it and look for another book on breads I can make. I have yet to even make my first loaf. Would I recommend it, yes, if the person is health conscious, loves wheat and wants to know all about grains, making bread, and much more than just a book on recipes it would be perfect for them. For someone, like me, who just wants some recipes, some limited info on types of grains since I will use mainly white flour, such as King Arthur bread flour, and just want to make simple bread it would be a waste of money.

Great GF section!
I need to eat GF and this is so helpful! Also, it has the best flavor and leaves a satisfied feeling, no gf bread in the stores compares.

This is the one book you will use over and over and give at Christmas. Get the harcover- you will use this book for 30 years!
Fast recipes, and a great, satisfying way to make bread. Just as it advertises. Very useful for the breadaphile. Great book for someone who wants a dense, tasty, long lasting loaf. A requirement for a family reunion or wedding, where you will make multiple loaves over several days. So many of my bread books require me to hand around the house kneading, proofing, etc. This one allows me to make it, shove it in the refrigerator and go. Very useful for someone that wants to use different grains. I would like them to incorporate more on seeds in the breads rather than just on top of the breads. The book is not a good transition to Kindle or computer as it is difficult to switch to other recipes.

Works extremely well (and I'm not an avid cook)
I haven't tried most of the recipes in this book; so far just the basic wheat bread recipe and instructions, but that's been working perfectly for me (and is probably all I really need). I'm getting delicious bread whenever I like, with almost no effort at all. While very little time is needed in terms of actual work, you do need to leave time for the dough to rise before baking, and for the baking itself, so pick a time when you'll be in the house doing some other work. It's extremely helpful that they've worked out the measurements (and weights) needed for more than a dozen different brands of whole wheat flour, and with or without added wheat gluten. That takes out much of the guesswork and fuss.

You must use Pillsbury flour just so ya know...
After waiting over a week for this to be delivered I'm very disappointed to discover the authors "sold out" to Pillsbury and goldmedal flour.ALL RECIPES call for x Pillsbury flour y goldmedal and they even go as far as to say that they can't recommended using ANY OTHER brand in these recipes.Pretty sure cooking with chemical laden GMO rich flour from mega corporations is gana cancel out the "healthy" from this bread...I have the very first recipe book they came out with and back then you were content to just say "whole wheat" or "all purpose".Also having to add gluten powder to get these recipes to rise means your recipes didn't actually work out. You had to force it. It's not 5 mins a day if I gata drive to 3 different stores trying to hunt down different brand name flours and additives.

A really really great book
I used to believe that making bread was an arcane art, requiring special training, tools and skills. This book, and it’s sister ‘The New Artisan Bread in Five minutes a day’ opened my eyes to a whole new world. I did not know that this could be so easy. I’m making healthy, delicious bread with almost no effort. If you want to learn how to make bread then this book is all you ‘knead’. You do not even have to ‘knead’ the dough you make.

Unexpected
This book was not what I expected. Only a handful of pictures but a lot of detail and science behind the recipes. All of which is great to know but I don’t need to know, I just wanted the recipes. But a great book

I have the first book, but wanted more recipes for grain and wheat breads. This is another excellent book. It's so easy to make bread with this method that, even though i'm working, I can make bread for my family sooooooo easily. My husband is beside himself!

Another great addition to a wonderful line of bread books
This is my 3rd book in this series and it doesn't disappoint. Many wonderful new breads to try, healthy alternatives to what breads I already make. Ultra hydrated dough taste wonderful with no kneading.
