Very Very sharp
Nice knives, just be careful because ceramic blades are very brittle and they will break if you are not careful with how you handle them.

Razor Sharp
Although I bought them after hearing that ceramic knives had a reputation for sharpness, I wasn't prepared for HOW sharp these were. They cut like a laser beam - effortlessly. I routinely trim roasts, etc. into steaks, with the usual struggling to get through gristle, fat, and so on. I tried the largest knife in the set instead of my Ginsu knives, which are satisfyingly sharp. Wow. Cut through meat like warm butter. Yikes. BE CAREFUL! Peeling off silverskin, trimming, whatever - these knives are truly like razor blades. They are a dream to use and work with - a kitchen tool of amazing quality. I can't speak to how long they hold that edge, because I've only had them a few months - but they're easy to clean, and if you do a lot of challenging trimming, these are far safer than the typical knife, because you don't have to struggle to cut through anything. Well worth the price; Kyoto Ceramics has a real winner here.

best I've owned
Razor sharp, light, and nicely balanced but ....... why don't they come with a protective sleeve or scabbard? While being incredibly sharp they, like all ceramic knives, are pretty brittle and the blade will chip easily. The instructions say " ..... store them in your wood block .... " but what if I don't have an old wood block from an old knife set? Protective sleeves really should be included.

Extremely dangerous
I bought this set because of size versatility though I really only use the smaller knives. I love how cute, lightweight and sharp the knives are and the ease with which they slice thru salad veggies.This was my first time using the largest knife and now I'm reconsidering the whole set. The first time using that knife could've ended very tragically if it was used by other members in my family. I cut into a freshly baked loaf of bread and immediately noticed the missing pieces on my brand new knife. The tiny white shards embedded themselves into my white bread, which neither my half blind mother, nor my usually oblivious husband would've noticed. The thought of anyone in my family, especially the baby swallowing those blade shards is enough for me to discard the whole set. It's very expensive but the risk is real.

I wish I purchased the set with the blade covers
These are perfect when new, I just wish they came with blade covers and were cheaper. I bought another brand of black ceramic knives several years ago (with blade covers for storage) and they were great when new, but over time the handles started to peel and they would not sharpen well even with the brand sharpener specifically for that knife, so decided to buy another set. Will have to wait and see if these have better longevity or will sharpen when needed (it seems like ceramic knives stay sharp for almost a year). These are great for boneless meat, fruit, herbs, nuts and vegetables. I would recommend a metal knife if you are carving a chicken with bones, but these are great on the meat itself.

Incredibly sharp. Incredibly lightweight. Incredibly brittle.
The four piece-knife set appears to offer everything an amateur cook desires: below $100; lightweight; and easy to clean. These knives are stealthily sharp. I’m not sure if it’s the lightness or the carefreeness of the user, but the knife slips through food with incredible easy. The knife cut through the surface of my skin when I accidentally grazed it; fortunately, no major injury incurred. Takeaway: use with care and avoid use on slippery surfaces.Unfortunately, the lightness of the knives comes at the cost of durability. After prepping vegetables for a stir fry, the 5.5” santoku was chipped at the tip and created a jagged edge, rendering the knife useless for food preparation.I’m not sure I got what I paid for as I owned the set for less than a year, and the most flexible knife is useless. Kyocera, I appreciate the intent, but please improve the durability so the set can last for years instead of month(s).

Love These Sharp Knives
These are very much like another brand I have owned for about 8 years. Very sharp and good looking! I have to assume they will wear the same as my previous brand, which I NEVER had to sharpen. I bought a new set since after all the years, I had two of them get chipped due to mishandling on my part. These seem to be the same good quality. I feel confident they'll hold up just as well, just treat them with care. Dishwasher safe. Highly recommend.

These babies are sharp
OK, so I owned one Kyocera paring knife that I was talked into purchasing at a kitchen speciality store. We had a Kyocera “Y” shaped peeler and absolutely swear by it so the paring knife was not a hard sell. In fact I liked it so much I bought a set of NON-KYOCERA brand ceramic knifes thinking they are all ceramic, how much difference can there be? WRONG!! The set arrived from Amazon and I couldn’t even cut through the skin of a cherry tomato. I promptly prepackaged them, returned them and purchase the set of Kyocera knives. OMG, they are razor sharp and I am not exaggerating. They are not for every job (still use my Wüstof Classic knives as well). Ceramic is like glass so there is no bend to the blade so you must be mindful about how you use them. I also bought the ceramic sharpener and the Kyocera cylindrical knife holder. Enjoy them, use them properly and be mindful that they are the sharpest thing you will ever use and will cut you if you get distracted while using them or washing them. Enjoy, but be careful!
