what is the lowest temp this will read?

K-type thermocouples can read down to -292 degree F (-180 degree C). Two things to keep in mind: At the low temperatures all insulation becomes brittle, so do not bend it when cold. Second, the electronic meter needs to be able to read low temperature, many thermometers only read to -50 degree F. A suitable meter that can read low temperatures is the Nicety DT1311 or DT1312.

Can I solder the wires together on one end to make K Type thermocouples or is this just to make extension wires?

I purchased the TC wire to be used as an extension wire. If you solder the wires together you would change the bi-metal composition and thus it would not be just a chromel-alumel junction. The resistance across the junction would change with the addition of solder. I do not believe it would work very well. You might try twisting the ends together. It's not the ideal and probably fail with time (oxidation). Higher temps would increase the rate of oxidation. The best way would be used a fabricated TC.

Can I mix solid and stranded? For example, I am using this as an extension wire for a water temp (K type) gauge and it used solid wire.

Off course. No problem. That is actually the most common way to hook up TC’s. Solid wire for the hot junction to a connector followed by stranded extension wire to the cold junction. (Your instrument or controller)
