What is the difference between this and the regular switchbot meter? Why would I buy the plus over the regular?

I've the hub mini and many SwitchBot Bot it's possible to make an automation triggering the button pusher based on temp/humidity on this device?

Yes it is. First you need the Hub Mini to connect with WiFi, a SwitchBot Temperature/Humidity Meter Plus and your SwitchBot Bot. You can use the Scene function in the SwitchBot App.

Can this temperature sensor trigger to turn on Alexa to enable both temperature and humidity?

You must to buy a SwitchBot Hub to make SwitchBot Meter Plus connect with Alexa. But Alexa only shows the temperature which depends on Alexa's rules, not Switchbot's or other brands' business.

Is it lthe bluetooth connection stable with my phone between floors of my house?

Of course. Bluetooth range: 394 feet line of sight under ideal conditions with no obstructions. Because of the way radio signals work, obstructions or interference can reduce the effective range substantially.
