Can it hold a 20 gallon fish tank?

20 gallons of water weigh 160 lbs + the weight of the fish tank and contents. I have mine loaded with heavy books and it is holding them just fine. Bear in mind that the depth of the shelves is approx. 12 ins. and if the fish tank depth is more than that, there will be overhang. My advice is to contact the manufacturer and inquire as to what is the weight limit of each shelf. Otherwise, it might be a better idea to purchase an aquarium stand specifically suited for this purpose. Having a load of books collapse a shelf is an inconvenience. Having a fish tank collapse one is a disaster, especially for the fish! I should think a 10 gallon would be a more appropriate size for this bookshelf.

Is this gray or brown. Photos look brown, but description says gray.

I think it’s more brown than gray If you have other wood that is distressed it will coordinate but if you’re looking for a true Grey this is not for you.

30 inches high. I use mine behind my sofa

Are the “X” cross bars necessary for sturdiness or could they be left off?

Yes, the "X" braces are necessary for stability. I have my shelves loaded with heavy books and in a location where the unit will not be bumped by people or pets. It is completely stable. If you were going to display only items of little weight and also put the unit in a place where it could not be bumped, you could ,perhaps, leave the crossbars off.
