Quality blade.
Quality: Sharp blade. Maintains it's sharpness well. Easy, comfortable grip and heft. Was a gift for my wife, who does all the carving in our kitchen. She loves the knife and uses it for nearly all carving needs.

Great knife for the money
Mercer culinary is a local brand for me. Great cutlery at an affordable price. They all work find and are extremely sharp out of the box. I'd love Wustoff, but I can't swing $170 for a chef's knife. You can't go wrong with Mercer. Highly recommended.

Very sharped. God quality knife
I bought this for my mom who was tired of dealing with dull blades and me tired of sharpening knives that didn't stay sharp. She really likes this knife. She said is very sharp, so she is extra careful when using it.

Not very stiff like the description says but very sharp and has a nice weight to it.

Nice knife.
This is a good knife. Nice handle, sharp blade that holds an edge, easy to clean. I’d recommend this to any household aspiring chef! This is not a professional grade knife but I’d bet that it could hold its own for a while. In my opinion the four best knives to get, in order, are: 10” chef, 12” bread, 7” boning, 3” paring. I’d feel good about recommending this brand.

Best Knives
I used to buy expensive knives, Wusthof , etc. None of them lasted that well. RENNAISSANCE by Mercer is the best knife for your money. I have their largest Chef knife and this knife. From a minimalist perspective, that is all you will need. I have hidden these 2 knives in and amongst my older set of Wusthof , Henckels, etc. That way, the family doesn't throw them in the dishwasher. This is the best knife for your money. Don't hesitate. - Do not put in dishwasher. Hand rinse and dry and put away.

Great filet knife!
I use Mercer knives in culinary school, as well as for my catering business, and in a professional kitchen. They are great knives for daily use. I use this boning one primarily to trim Boston butts and brisket.

Purchased as a gift and had the opportunity to use a couple times, really well made knife with a good weight to it and comfortable to use. Feels like it’s almost too cheap for how good it is!
