Is it suitable for a gas hob?

Yes. I had purchased this strip for my gas hob and it works perfectly. Since fitting the hob (which was sometime before almost 1 year) the fitted hob was passed by a gas safe engineer.I hope this helps

What is the thickness and width of the foam

It’s about 15 mm wide and 3 mm thick

For an induction hob do I just stick this tape to the underside of the edge of the hob and then put the hob in place? No separate clamps required?

Not on the hob, you simply mark out with a pencil where the hob sits, stick the foam to the worktop just inside the marked line and gently set the hob down on top. The weight makes the seal and if you take your time about it you can even get a nice curve in the corners. The foam should be just inside the edge of the hob.

Is this product heat resistant, its for a glass sealant on a cooker door

No I don’t think it would be suitable for that. It’s really for bedding a hob or a kitchen sink into a worktop. So, it is heat resistant to a degree, but I doubt it would withstand the temperatures generated in an oven.
