How big a bladder will the hydration slot take?

I have a 3L one in it and it fits fine. Could probably take bigger

The 20 lt may be suitable for a DSLR camera, but I suggest you the 36 lt version. Probably the 20 lt version is too narrow.

Will this rucksack be able to carry a small/medium sleeping bag, a basha and a few other small things (e.g. tins of food, etc.)?

I use it to carry link as I'm a GPMG gunner, you can fit a jungle sleeping bag or another sleeping bags that can be compressed quite small (e.g. no Bouncing Bomb) it's a good size day sack and should have plenty of room for what you need.
