If I have the red bretzel variety do I need these for a tobacco pipe

Don't use the craft "pipe cleaners" for pipe cleaning. They are typically too thin and non absorbent. Use a pipe cleaner made for pipe cleaning. These are made for pipe cleaning

What kind of wire is used? Is it aluminum that will become brittle and break over time or another metal that will work harden?

These bend fairly easily. I can’t tell you for sure what kind of metal it is but it is very soft.

Are these cleaners non-shedding? I want to use them to clean airbrushes.

I bought them for small vacuum cleaners, and they did not shed. I wound couple of them together to get dust or dirt out of small places. Hope this helps answer your question.
