This kit in a bundle with oil says it can do two sheep skins but the one sold without oil says it can do 3. Is this one in an oil bundle smaller?

That will be a typo in the description of the single item. All K-Tan kits are advertised as being able to tan 2 large sheepskins or the equivalent area. There is only one size for the K-Tan kit. Buying the Oil with the kit is a great saving.

Do you need to salt the hides before using the kit?

Ideally yes you do prior to fleshing. There are full instructions in the kit.

does this kit give waterproof / washable skins once they are done?

It certainly won't give you anything waterproof. As to washable, that depends on what you mean by 'washable'. A washing machine - certainly not. Damp sponge to remove a blemish, you're probably OK.

What size hides would this do? I have 2 bullocks hides I wish to tan, many thanks

One K-Tan kit will tan 2 large sheep skins or the equivalent area. Bulk kits are available for larger skins. I would suggest 2/3 kits per Bullock skin.
