Are these REALLY FIVE inches? Like INSIDE - Useable FIVE inches?

No, not really. They are 5" from an outside scallop to the opposing scallop. The lower center indention circle is about 3", then the side walls slope up a bit. The plates are not flat. I suppose if you put a 4" circular piece of food centered on this plate, nothing would fall off. 5" might be a different story.

If used under smaller-sized,coffee-creamers (ceramic, bone china,chrystal,glass) will the creamers be safe from sliding off when in use?

The flat portion of the plates is 2.75" wide. From there, the sides slant up.
