Do you have to have a microwave to cook them

No, don't use a microwave as the mixture forms by suddenly adding water that's only a second before been boiled. Add water GRADUALLY to the packet mix, and bring to the consistency required. If you follow the packet instructions you'll end up with it too thin - you can add water, you can't take it away once added. Adding a knob of butter helps too. Don't overstir it otherwise you mobilise the starch too much and it'll become stodgy.

What is the sell by / use by date on the packets please?

Hi I last bought this item, end of May, and directions on the packet where best before April 1st 2022.Hope this helps.

Are these allowed for a keto diet please?

Hi, While most varieties of Idahoan Perfect Mash are Gluten Free and vegetarian, our potato as all potatoes do contains starch and also a level of carbohydrate. So in the truest sense of the word, it would not form part of a Keto diet, however, unlike other instant mash potatoes we take the water out of the potato super carefully through our "Fresh Dried" process and this means the starch does not escape the potato cells and gives you that Fresh Mash potato fluffy light texture. You will also note that the calorie content is also lower than most people would expect and if you buy our Classic Perfect Mash that has the least seasoning out of all our range and as a result the lowest calories of our range (it's the blue packet) So I would say no, but it's borderline in my personal view and therefore becomes a personal choice. This was drier than the other varieties (but can be overcome in various culinary ways). The pungent aroma didn't deliver on taste either. I'd order again if the price was right, but I prefer the other varieties.
