I LOVE THESE MIRACLE NOODL FETTUCCINI. For me they have the perfect al dente texture and are extremely easy to use. I make them with a cheese sauce most of the time. I like the portion control that’s built in to the packaging as well. I recommend these to anyone looking for a low calorie, tasty substitute for egg noodles.

I love that these are certified gluten free and organic. As a celiac household, food safety is a challenge. The Miracle noodle ready to eat fettuccine packets are great for quick meals. Simply, open the package, drain and rinse the noodles, then heat in microwave for a quick minute or leave it cold, top with some sauce or seasonings and dig in. The noodles are odorless and flavorless, they are not slimy or sticky. Which is a great compared to a lot of other gluten free stuff. Get your flavor from the meat and sauce, not the noodle.What I don't love is the texture and lack of nutritional value. The texture is very rubbery. As far as nutritional benefits, consuming the entire bag will gain you 6 grams of carbohydrates, 4 grams of dietary fiber and 40 mg of calcium.Bottom line: This is a great gluten free alternative that is shelf stable so you can keep on hand for a quick and easy meal filler if you don't mind chewing the rubbery noodle alternative.

If you start by comparing these noodles to, let's call it real Fettuccine, you might be disappointed. Instead, if you look at other ways to use them, they have a lot going for them. I mixed them with a bag of pre cut stir fry vegetables and fried in just a touch of sesame oil and they were great. They hold up well to the frying process and add some interest and texture to the dish. This is a great way to prepare a very low calorie and low carb dinner but also has enough substance to fill you up. These are really handy to take on camping trips as they are basically precooked and don't need additional (sometimes precious) water. The only downside is they are a little expensive, not so bad if comparing to something like freeze dried camp food but not a cost effective replacement for pasta.

The texture that these exhibit is strange and really not for me. Too chewy and strange. Having noodles come in a pouch already soft is just odd to me. I don’t like that they have to be rinsed. The color is strange and reminds me of space food or something engineered. I’ll stick to the normal stuff

When I make meatballs I always fix enough for several meals and keep them in the freezer. Heat a batch of sauce and pre-prepared meatballs along with a quick salad and sit down with the family to a great meal.....should have mentioned some garlic bread too.
