I dont know much about cooking Indian cuisine or all the spices...I just know I like to eat it. I bought this and wow. I like to get a pan full of chicken thighs and season it with this and some salt. once they are cooked I roughly slice it up in the pan, add a little water to break loose all the fond on the Botton of the pan, and it makes a wonderful sauce...super tender chicken, and perfect to lay on top of some rice. the flavors come out once its cooked, I was kinda skeptical because its not salt or msg forward like most seasonings I typically use. I will be buying more for sure, and I feel like this is a healthy way too get lots of flavor in meals without all the bad stuff in typical seasonings that I have in my pantry
