Is there a stop feature if little fingers get inside the hinge where it pinches closed?

No stop feature, but the closer moves so slowly I don't think it's an issue.

It was easy to install and lowers the lid to our bench top very slowly. I'm not sure how heavy your cabinet door is so you need to research the weight capacity

Can this be installed in a soft-open mode? I have a cabinet where the door opens from the front and swings down, I want to retain the door as it hangs

How do I adjust the soft close? About half way it drops hard.

I do not think you can adjust the speed of the soft close (at least there are no adjustment screws and the mechanism just spins on the support before you affix the hinge arm to the lid). How fast it closes depends upon how heavy the lid is in comparison with the weight range rating of the hinge. My lid is 28 lbs. (before paint) and using 2 of the 13-16 lb. hinges works well.
