Does this work with Anazon Firestock so I can connect to LG Stand by me TV?

No this does not connect to a firestick. This is for using a computer without a monitor.

"Does it work with iPhone?" It works with everything that has an HDMI port. iPhones don't have HDMI port, but if you have an Lightning adapter to HDMI, it would work."Does it need WiFi?" With this question, you seem not to understand what exactly this product is. This is an HDMI terminator. It sends the video signal literally **nowhere**. It was designed to be plugged in computers that expects a screen but for some reason need one. For example, I have a Mac mini that is headless. And the HDMI terminator allow me to tell the Mac mini that its native resolution is 4K, so that when I connect through the network, I get high resolution images

What is needed to get macOS to allow 1920x1200 listed as an available resolution? I see most of the other ones, but that resolution isn't an option.

I'm not certain this can do what you want. All this device does is to "trick" the computer into "thinking" that an external monitor is attached to the port. The resolutions available at that point is dependent on the capabilities of your computer.
