Love this product, no refining, just flour. Super quick shipping.

This is a really decent double oh flour. Sticky, very sticky (tons of gluten!), mixing and folding is going to be messy... but resulting dough is just asking to be hand-tossed! Elastic, just enough stretchy to make a great pizza crust. And the crust bakes perfectly, even and browning beautifully... with only one problem - weak, barely discernible flavour, even after pre-fermentation. Aroma is present, but taste is missing. Hence 4 stars. But still, a decent flour! Expensive, but reasonably so.

The flour worked very well in my recipe. I made gnocchi and they came out perfect. The only issue I found is the flour has an odd perfumy chemical smell. The smell and taste came through even once I cooked my gnocchi. Not sure if it was the bag it came in or the flour mixture itself. I have noticed this smell in other food products lately. We can only hope that when we are buying products that they are safe, and not a threat to our health. Because of this smell I will not be buying this product again.
