Q: Is there a non grounded version of this and will the cable withstand 500 degree F heat? I need to put both the probe and cable in an oven.

Thermalcouples have 2 poles. Inside is 2 dissimilar metals. When heated they create a milivoltage reading. Always 2 wires. As for an oven, works perfectly. The 2 wires inside the ss sheath are coated in a fiberglass resin that withstands the heat. This thermalcouple goes to an electronic controller.

Q: Does it measure at the tip, or is it an average temperature across the shaft?

It measures the temperature at the tip.

Q: Is this available in different probe lengths?

The pointy tip version is only available in 6 inch, there is a blunt (flat) tip version of this that is 3 inch (model HT-2)
