Not practical
This book is beautiful, and I love that chefs of this stature are rethinking vegan pastry. That said, however, this is not a user-friendly book, given that it contains specific special and expensive ingredients that are hard to find, like Yumgo. It also uses vegan butter/margarine, which I detest for its processed flavor. I can figure out how to make vegan pastry myself if it's just a matter of substituting vegan butter and plant-based milk. I was disappointed to find a dearth of cakes and cookies and an excess of macarons. I think Philip Khoury's book on vegan baking is much better. But it's a beautiful book and some of the recipes are worth the hassle if you have the time and patience.

Disappointing
Disappointing and pretentious. I've been a vegan baker for over 25 years and I was really looking forward to this cookbook. Unfortunately, it was a huge letdown. The author explains nothing about technique and instead provides a list of ingredients, many obscure and unavailable in the United States, along with some recipes. I could have googled everything he offers in this book. The photos are very pretty, though, and if you're looking for a glossy cookbook with style but without substance, this is the book for you.

Not usable
If you're an experienced pastry chef, this is the book for you! If you're anyone else, including pretty good home bakers, this is better checked out from your library. Lots of specialty ingredients paired with limited instructions (what is this, a British Bake Off technical challenge?) and lovely photographs do not a cookbook make.
