Will these be ok to store petrol in for my motor bike

NO! Certain plastics react with petrol and can soften and can pose a Fire risk. Plus if carried in a vehicle must be no larger than one gallon (4.5 lts) or 2 gallon if metal.

How good are the handles on these? I want to use them weighted walks but will need an easy grip that isn't too shallow

Very good and strong enough for full containers

can I get replacement screw caps?

The barrels are blow moulded the caps are formed usually by a different manufacturer. Replacement caps are available but in trade quantities of 100. Cheaper to by more barrels.
