"And the fine print taketh away." Had to give this knife "four stars," because the value was amazing (56% off from regular retail price); the blade is perfectly-shaped, razor sharp out-of-the-box, and made of super-attractive Damascus steel; and the execution of the handle (G10 polymer-impregnated glass fiber) is perfect -- good hand-fit, many thin layers, each discernable and with no visible imperfections. Considering the foregoing, why no "five-star" rating? Two reasons. 1) I discovered this is NOT, as I assumed, manufactured in Japan, home of San Mei excellence. The tags and packaging reveal that it's made in CHINA; 2) This knife, despite its beautiful, durable G-10 handle, is NOT suitable for use on a boat or dock. The G10 material makes the handle overly-heavy in comparison to the blade (so that it's likely to tip and fall out of any standard 7" filleting-knife sheath, and so that it does not balance properly for use in the "real world.") If you don't mind a "handle-heavy" filleting knife made in China, and if you're buying one for use in your home (where weight and balance are less of an issue) then you can probably disregard the "hits" I have documented here -- still a great knife, with excellent fit and finish, and made with top quality materials!

Awesome razor sharp knife… no kidding, it actually worked shaving. The blade is stiffer than I like for filleting fish, other than that, I couldn’t ask for a better fillet knife.

Excellent quality knife. Extremely sharp right out of the box. Handle is very smooth, with no edges poking out where the steel meets the handle, nice attention to detail. Handle is slightly on the heavier side, which affects the balance of the knife, but it feels nice in the hand regardless. It's made in China, but they used Japanese steel, so the quality is quite good. As a professional chef, I can honestly say this is one of the nicest filet knives that I own. You won't be disappointed.
