Do you have to use headphones on a web conference call so that it doesn't pick up the voices of who you're speaking to?

Short answer yes use headphones, or mute the mic when your not talking to avoid crosstalk Long answer no, depending on how technical you are, you can apply a noise gate (and other filters through software) to reduce sound to the mic so it only picks up sounds above a certain level, a noise gate only applies when your mic is inactive so if your speaking and someone else is speaking it can still pick up the other voices depending on noise levels and noise gate settings.

Does it work with no headphones / speakers plugged in? I bought a microphone which doesn't. Hence my question.

Depends entirely what you mean by "good". I use it for recording my practice sessions and to my ears it sounds very accurate. I'm very pleased with my Yeti.
