A healthy Flour - Good Value
I ordered a 25 pound bag of spelt flour - after delivery I saw the kind of spelt flour was not what I expected and that the price dropped 20 dollars within days. .. I went back on the site and saw ground spelt flour-- but it was the same as i previously ordered--- After searching I realized that I made a mistake- in that I compared this spelt flour to one that i had previously purchased from another vendor. Now I have more of the flour I didn't really want but it is not bad in texture. I baked with it and combined it with rye flour and it was good.

Heart good
I absolutely love the flours from this company this particularly one that spelt is very Hardy in texture. This is definitely the flour to go to if you're looking for an ultra healthy flour.

excellent flour but mix with all purpose or bread flour
I think Great River organic flours are good, but I have had limited success with this whole grain spelt flour when using for breads or cakes. Even a 50/50 mix with ap or bread flour can come out dense/ flat, so I have to use less of this flour than I would have liked. My favorite flour to date is the Central Milling organic bread flour - type 80 old world blend. I wanted to add some whole spelt flour to it to make it healthier but it changes both the taste and texture in a negative way for bread making. I have, however, made delicious and healthy tortillas with a half and half mixture using this spelt flour and ap flour, so for more forgiving baking needs it works well :)

I love this flour
Due to digestive issues I am not to have any kind of wheat flour. This was very hard for me to think about since I bake on a daily basis (breads, muffins, cakes, etc.) However, I researched on different flours and decided to try this one. I have been using this flour for over a year now and we love it. Of course, it is different than wheat flour in taste and texture, but it was easy for me to adjust to. I've learned that you need to add extra leavening to dough and batter than normal recipes call for. For example, if the recipe calls for 2 tablespoons of yeast, I add an extra tablespoon. Since spelt flour is heavier than wheat flour, it needs a little more encouragement to rise.If this is your first time trying this flour, I would suggest starting out with something as simple as muffins or pancakes to get the feel of the flour. Also, instead of using all spelt, use half spelt and half white or wheat flour to start getting your taste buds used to a different flavor. Adding spices also helps adjust.This is also the best price I've been able to find. I subscribe & save which also saves a couple of dollars.

Superior Quality Organic Flour
This is a beautiful fluffy spelt flour, the best I have ever purchased. I wouldn't have thought to buy flour online but being unable to shop in person for a period of time, I gave it a whirl. I had purchased the Great River white flour at Costco awhile back and was so impressed with the brand I tried the spelt. Great River is the only flour I plan to buy from now on - it's just wonderful. Everything bakes beautifully with it from pancakes to quick breads to sandwich loaves. It's not easy to ship flour but my 25lb bag arrived well packaged and undamaged. Highly recommend.

Easy to work with
I use this to make the perfect sourdough loaf ! Just a beginner we but I find the flour is easy to work with ! However with the same amount of water I have to adjust my flour amount from time to time

new found love for bread
I was gluten-free for 12 years. Spelt has a weaker gluten so some gluten sensitive can tolerate it. I decided to try it and never felt better. I use it to feed my sourdough starter and then as the bread flour as well. It makes great bread that is easy to digest even for sensitive digestive systems like mine. I LOVE bread again!
