Are there directions in English on the package?

The instructions are in English, Frenh & Korean.

Sugar is listed in the ingredients, yet no grams of sugar are listed under the nutrition facts. ???

The package states that for every 1/4 cup of the mix, it has less than one gram of sugar. This is a savory pancake and you will totally enjoy this Korean specialty. All you need is to follow the minx instructions to make the batter and have ready thin strips of carrot, celery, potato, scallions and mock crab if you like or some other meat pieces, but not necessary, and ladle the batter into the pan and then add the fillings side by side on top of the batter and a little more batter on top if needed and then fry both sides, medium heat. Serve with a spicy dipping sauce= 1/3 cup soy sauce 1/3 cup rice wine vinegar 1 tablespoon sesame oil 1 tablespoon chili pepper flakes (kochukaru), or cayenne pepper or Sriracha sauce 1 tablespoon scallions (thinly sliced) 1 teaspoon garlic (finely chopped) Wonderful meal!!!!

Does anyone know why my pancakes always turn out gummy in the middle? I’ve tried varying thickness of batter, cooking temp and length, etc. No change.

You have to let your temperature be a bit high at the beginning with the vegetable oil as the mix starts cooking gradually lower the temperature and turn over the mix and with the spatula press it down a bit , hope this helps

Did yours arrive with expired date? And Amazon refused to accept review?

I do not know if it arrived with an expiration date but I can tell you I keep this product in a plastic and others like it in a semi frozen section of my refrigerator. I am not aware that amazon refused to accept my review of this very excellent product, which I would always recommend.
