I just bought 1 lbs of Zinc Sulfate for my 3 ft tall pecan tree. I didn't find a anything inside the package on mix ratio?

How does it work on pineapple plants?

I use it on citrus trees and do not have experience with pineapple plants. However, it is a basic nutritional ingredient for all plants as far as I know. It has worked well on the citrus trees.

For roof application is very it mixed with water and if so, what mix?

Zinc sulfate can be applied in the powder form on the ridge of the roof at a rate of 5 pounds per 1000 square feet of treatment area. This can be very dusty and not recommended. For better results, mix it in a sprayer at a rate of 2.5 pounds per 5 gallons and apply it at the same rate as the powder. 2.5 pounds (5 gallons) would be applied to 500 square feet.
