Can this be used in Sodastream machines, if so what amount per 1 liter should be added to water?

All the Monin syrups can be used with a sodastream (I have one). You use about 1/2 cup (again, the same as soda stream syrups) per liter. I've tried a few different syrup makers (SodaStream, Cuisinart, Tourani) and I like Monin's the best.

Does this taste like candy watermelon or actual watermelon?

It doesn't taste like watermelon candy. I would say it taste more like the actual fruit but not the kind that's extra sweet if that makes sense.

Long shot here but, had anyone made a cucumber sunrise with this syrup? Taste like the ones from alchemy bar on Carnival?

I don't know what a cucumber sunrise is, but I would avoid Monin syrups. They never taste like what they advertise to taste like. I use DaVinci syrups and these are the best - trust me, I have tried them all. I tend to use DaVinci Orange and Lime flavors and these are delicious. I highly recommend DaVinci, of them all, their syrups have the best and most accurate flavors.

What is the shelf life of an opened bottle of Monin syrup?

Not sure when I bought mine but date on bottle says good till 7/17
