These air locks are essential in making homemade wine.There are some airlocks made of three pieces of plastic. I only recommend these. If the liquid evaporates fruit flies and bacteria could reach the must turning your wine into vinegar.These single piece airlocks are more reliable. If you see the level of the liquid going down simply put a teaspoon of water, or vegetable Glycerin at the top and it will run down to the goose neckThe three piece units you have to remove the top to add more liquid to the airlock.
