I too tried to avoid sugar. The longer it sits the more tartness and then it gets sour and has to be disgarded. It tastes sorta like flavored water and has a lot of health benefits. My daughter does not like kombucha but does like water kefir. I make mine w 1 fresh lemon 1-2 dried apricots and sometimes a trace of molasses. When it is finished and drained I add a raspberry tea bag to the kefir we are about to drink and just leave the teabag in the jar in refrigerator. We really enjoy this refreshing raspberry lemonaid mild kefir water. Hope you do too. **Q: Do the grains arrive dried or fresh?** A: They arrive fresh.
