This unit kept the trays of food hot until dinner was served. After dinner, the left-overs were put back in the carrier with a half-tray loaded with ice to cool it all down. It cooled to a safe temperature and stayed there until it was brought out for lunch the next day. Everyone in the Hospitality Staff was amazed at how well it worked. I'm planning to buy another unit out of next year's budget -- it's money very well spent.
